Antipasti Salad Recipe


Recipe Ingredients:

1/2 lb ziti pasta
3 qt water
1/2 green bell pepper, diced
1/2 tbsp crushed garlic
2 oz feta cheese
2 tbsp extra-virgin olive oil
1/4 small red onion, diced
1/2 red bell pepper, diced
Freshly-ground black pepper, to taste
5 tbsp balsamic vinegar

 

Recipe Instructions:

Bring the water to a boil in a large pot. Add the ziti pasta and stir to prevent the pasta from sticking. Cook for 10 to 12 minutes, or until the pasta is done. Drain the water, then cover the pasta with cold water to cool.

Once the pasta has cooled, drain the water. Add the remaining ingredients to the pasta and mix well. Refrigerate for 1 hour, mix again, and serve.

This recipe yields 5 servings. Serving size: 6 ounces.

Exchanges Per Serving: 2 Starch, 1 1/2 Fat, 1/2 Vegetable.
