Apple And Onion Soup Recipe
Recipe Ingredients:
1 tbsp canola oil 2 large onions - (8 oz ea), sliced 1/2 tbsp chopped fresh rosemary = (or 1/2 tspn crushed dried rosemary) 1/2 tbsp chopped fresh thyme = (or 1/2 tspn crushed dried thyme) 2 tbsp oyster sauce = (available in Asian markets and some grocery stores) 1 lb Granny Smith or Mutsu apples - (3 med), peeled, cored, and cut into thin slices 6 cups fat-free no-salt-added canned chicken broth Salt, (optional), to taste Freshly-ground black pepper, to taste 1/3 cup grated skim-milk sharp cheddar cheese
Recipe Instructions:
Heat the oil in a large pot over medium heat. Add onions, rosemary, and thyme; sauté until onions wilt, about 3 minutes, stirring frequently.
Add the oyster sauce, apples, and broth. Bring to a boil, lower heat, and simmer, partially covered, for 15 minutes. Taste and add salt (if using) and pepper.
Ladle hot into soup bowl, sprinkling each portion with some of the cheese. Serve at once.
This recipe yields 6 servings.
