Apple Coleslaw Recipe
Recipe Ingredients:
1 cup shredded red cabbage 1 cup shredded green cabbage 1/2 cup shredded carrots 1/4 cup diced Granny Smith apples 2 tbsp raisins 2 tbsp apple cider vinegar 3 tbsp unsweetened apple juice concentrate 1/2 cup low-fat mayonnaise Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
In a large salad bowl, combine the first five ingredients.
Whisk together in a small bowl the remaining ingredients. Pour the dressing over the slaw and toss well. Cover and refrigerate for 30 minutes before serving.
This recipe yields 6 servings. Serving size: 1/2 cup.
Exchanges Per Serving: 1/2 Fruit, 1 Vegetable, 1/2 Polyunsaturated Fat.
