At The Zoo Recipe
Recipe Ingredients:
2 slices whole-wheat bread - (to 3), toasted 1 tbsp peanut butter or Neufchatel cheese 2 tbsp mashed banana = (or 2 tbspns crushed juice-packed pineapple) Raisins, currants, or dried apricots, (optional)
Recipe Instructions:
Press the cookie cutters firmly into the toasted bread to make an animal or other shape. Spread with one or two of the suggested toppings. For even more fun, use raisins or currants for eyes and noses and a sliver of dried apricot for a mouth.
If you're making shamrocks, you can spread clover shapes with Neufchatel and cover with finely chopped parsley leaves. You can use the same technique for a holiday tree, and decorate it with raisins, dried cranberries, and chopped dried fruit. For hearts, mix a little red food coloring and a dash of cinnamon into Neufchatel.
This recipe yields 2 servings. Serving size: 1 slice.
