Banana-Nut Bread Recipe
Recipe Ingredients:
2 cups whole-wheat flour 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp nutmeg 2 eggs 2 tbsp canola oil 1/4 cup sugar 1 1/2 cups sliced bananas 1/3 cup chopped pecans
Recipe Instructions:
Preheat the oven to 350 degrees. Combine the flour, baking powder, baking soda, and nutmeg in a mixing bowl. Process the eggs, oil, sugar, and bananas in a blender or food processor until smooth.
Pour the banana mixture into the flour and mix well. Add the pecans. Pour the batter into a nonstick 9- by 5-inch loaf pan. Bake for 40 to 50 minutes or until a toothpick inserted in the bread comes out clean. Remove from the oven and let cool for 5 minutes before removing from the pan.
This recipe yields 16 servings. Serving size: One 1/2-inch-thick slice.
