Black Bean Spread Recipe
Recipe Ingredients:
1 1/2 cups cooked black beans 3 tbsp hot salsa 2 scallions, minced 2 garlic cloves, minced 1/2 cup low-fat cottage cheese 1 tsp Tabasco sauce 2 tsp cumin 1 tsp coriander Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
Combine all ingredients in a blender and blend until smooth. Add a little water, if necessary, to blend mixture thoroughly.
This recipe yields 12 servings. Serving size: 2 tablespoon.
Exchanges Per Serving: 1/2 Starch.
