Cheesy Broccoli & Rice Recipe


Recipe Ingredients:

cooking spray, non-fat
1 cup celery, chopped
1 cup onion, chopped
1 10 oz. pkg. frozen chopped broccoli, thawed
1 10 3/4 oz. c cream of chicken soup, low-fat
2 tbs. Molly McButter®
1 cup water
1/2 cup canned evaporated skim milk
1 cup Minute rice
1 cup shredded cheddar cheese, light
pepper

 

Recipe Instructions:

Preheat oven to 350 degrees. Spray skillet with cooking spray. Saute celery
and onion over medium-low heat for 10 minutes. Stir in broccoli and mix well.
Cook 10 minutes more. Add soup, butter, water, milk, rice, cheese and pepper.
Stir well to thoroughly combine. Spray 2-quart casserole dish with cooking
spray and pour mixture into it. Cover and bake for 20 to 30 minutes.

Servings: 6
