Chicken Chili Recipe
Recipe Ingredients:
1 tbsp canola oil 1 onion, chopped 1 garlic clove, crushed 3 cups finely-chopped cooked chicken 4 cups low-sodium chicken broth 1 can no-salt-added crushed tomatoes - (28 oz) 1 can pinto beans - (15 1/2 oz), rinsed, drained 1 can black beans - (15 oz), rinsed, drained 1 can chopped jalapeño peppers - (4 oz), drained = (or 2 oz for less heat) 1 tbsp chili powder 1 tbsp ground cumin 1 tsp salt, (optional) Freshly-ground black pepper, to taste
Recipe Instructions:
Over medium-high heat, heat the oil in a large pot. Add onion and cook until limp, about 5 minutes. Add garlic and cook, stirring, 1 minute. Add all remaining ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally, until thickened (approximately 50 to 60 minutes).
This recipe yields 10 servings. Serving size: 1/10 recipe.
