Chicken Garbanzo Tabouli Recipe


Recipe Ingredients:

2 cups bulgur
2 cups boiling water
2 cups diced cooked chicken
1 tomato, chopped
3 green onions, chopped
1 can garbanzo beans - (16 oz), drained, rinsed
1/2 cup chopped red bell pepper
1 carrot, grated
1/2 cup currants
1/4 cup chopped dried apricots
1/2 tsp salt, (optional)
Freshly-ground black pepper, to taste
2 tbsp chopped fresh basil
1/4 cup chopped fresh parsley
=== DRESSING ===
1/2 cup lemon juice
2 tbsp olive oil
1 garlic clove, crushed
1/4 tsp cumin
1/2 tsp curry powder
1/2 tsp salt (optional)
Freshly-ground black pepper, to taste
6 romaine lettuce leaves, crisped

 

Recipe Instructions:

Place bulgur in bowl. Pour boiling water over and let stand until water has been absorbed (15 to 20 minutes). Cool.

Add chicken, tomato, green onions, garbanzo beans, bell pepper, carrot, currants, and apricots. Toss well. Sprinkle with salt, pepper, basil, and parsley.

Place lemon juice, oil, garlic, cumin, curry powder, salt, and pepper in screw-top jar and shake. Pour dressing over all and toss well.

Arrange lettuce on serving platter. Heap bulgur in middle and serve.

This recipe yields 10 servings. Serving size: 1/10 recipe.
