Chicken Waldorf Salad Recipe


Recipe Ingredients:

2 cups cubed or shredded cooked chicken breast
2 cups chopped cored red Delicious apples
1 cup sliced celery
2/3 cup halved seedless grapes
1/4 cup chopped pecans, toasted
1/2 cup fat-free mayonnaise
1/2 cup fat-free sour cream
3 tsp lemon juice, (3 to 4)
2 tsp Dijon-style mustard
2 1/2 tsp Equal For Recipes
= (or 8 packets Equal sweetener
or 1/3 cup Equal Spoonful)
Salt, to taste
Freshly-ground black pepper, to taste
Red leaf lettuce, for serving
1/4 cup chopped pecans, (optional)

 

Recipe Instructions:

Combine chicken, apples, celery, grapes and 1/4 cup pecans in bowl. Blend mayonnaise, sour cream, lemon juice, mustard and Equal; stir into chicken mixture. Season to taste with salt and pepper.

Spoon salad onto lettuce-lined plates; sprinkle with 1/4 cup pecans, if desired.

This recipe yields 4 servings.

Exchanges Per Serving: 3 Meat, 1 1/2 Fruit.

Nutrition Facts: Calories 251; Calories from fat 29%; Total Fat 8g; Protein 21g; Carbohydrates 27g; Cholesterol 48mg; Sodium 489mg.

Tips: Cubed, lean smoked ham can be substituted for the chicken. Pineapple chunks can be substituted for the grapes; spoon salad into a hollowed-out pineapple half to serve.
