Chicken With Oysters Recipe


Recipe Ingredients:

Nonfat cooking spray, as needed
1 chicken - (3 1/2 lbs), cut into pieces,
skin removed
1 tbsp oil
2 tbsp flour
1 cup low-sodium chicken broth, boiling
1 cup evaporated fat-free milk, scalded
1/2 tsp salt, (optional)
1/4 tsp freshly-ground white pepper
1 pt shucked oysters

 

Recipe Instructions:

Preheat oven to 350 degrees. Heat broiler. Spray broiler tray. Place chicken on tray and broil until browned on all sides (5 to 6 minutes). Place in casserole with lid.

Heat oil in saucepan over medium heat. Add flour and cook, stirring, 2 to 3 minutes. Remove from heat and pour on boiling broth, beating vigorously to prevent lumping. Return to heat and cook until thickened. Add scalded evaporated milk, salt, and pepper. Beat until smooth. Pour over chicken.

Cover and bake for 35 minutes. Add oysters, cover, and bake another 10 minutes. Serve at once.

This recipe yields 8 servings. Serving size: 1/8 recipe.
