SALAD 1.00 Head Romaine Lettuce - fin 0.50 c Red onion - finely chopped 1.00 c Celery - finely chopped 1.00 c Tomato, seeded - finely ch 1.00 c Fresh or frozen peas 3.00 tb Canadian bacon, finely cho 4.00 Leaves fresh Basil - finely 0.50 c Toasted almonds - optional DRESSING 0.50 c Fat free mayonnaise 1.00 tb Apple juice concentrate 2.00 ts Rice vinegar 0.25 ts Garlic powder 0.25 ts Salt White pepper to taste

Mix dressing in a blender. Pour over salad and mix well. Serve. Yield: 8 servings. 1 serving = approx. 1 cup NUTRITIONAL INFORMATION: 98 calories, 5 grams protein, 5 grams fat, 9 grams carb., 4 mg cholesterol, 135 mg sodium.
