Coriander Carrot Salad Recipe
Recipe Ingredients:
=== SALAD === 3 large carrots, peeled, grated 3 tbsp chopped shallots 2 tbsp minced parsley === DRESSING === 2 tbsp olive oil 3 tbsp lemon juice 2 tsp ground cumin 1 tsp ground coriander 1 dash freshly-ground black pepper
Recipe Instructions:
Combine the salad ingredients in a large bowl.
Whisk together the dressing ingredients and toss with the carrots. Serve over lettuce leaves if desired.
This recipe yields 6 servings. Serving size: 1 cup.
