Cranberry Salad Recipe
Recipe Ingredients:
2 cups cranberries 1 cup water 1/2 cup fresh lime juice 24 packets Equal sweetener = (or 7 1/4 tspns Equal for Recipes or 1 cup Equal Spoonful) 1 package cranberry or cherry sugar-free gelatin, (small pkg) 1 cup water 1 cup diced celery 1 can crushed pineapple in juice - (7 1/4 oz) 1/2 cup chopped walnuts
Recipe Instructions:
Bring cranberries and water to a boil. Remove from heat when cranberries have popped open. Add Equal and lime juice; stir. Set aside to cool.
Dissolve gelatin with 1 cup boiling water. Add cranberry sauce; mix thoroughly. Add celery, pineapple and walnuts. Pour into a mold or bowl. Place in refrigerator until set.
This recipe yields 8 Servings. Serving size: 1/8 recipe.
Exchanges Per Serving: 1 Fat, 1/2 Fruit.
