Creamy Tarragon Asparagus Recipe
Recipe Ingredients:
2 1/2 lb fresh asparagus, ends snapped off 1/2 cup low-fat sour cream 1/4 cup Parmesan cheese 1 tbsp low-fat mayonnaise 1 tbsp tarragon 1 tbsp lemon juice 1/2 cup evaporated fat-free milk Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
Rinse the asparagus and pat dry. Steam the spears in an asparagus steamer or in a metal steamer over boiling water for 8 minutes until tender-crisp.
Meanwhile, combine all remaining ingredients in a saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes. Pour the sauce over the asparagus and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
