Crisp And Cool Middle Eastern Salad Recipe
Recipe Ingredients:
1 green pepper, chopped 2 medium tomatoes, chopped 1 medium cucumber, peeled, chopped 3 green onions with tops, chopped 1 cup plain low-fat yogurt 1 tbsp chopped fresh dill = (or 1 1/2 tspns dried dill weed) 1/2 tsp salt 1/2 tsp freshly-ground black pepper
Recipe Instructions:
Toss green pepper, tomatoes, cucumber, and green onions in a medium-size bowl.
In a small bowl combine yogurt, dill, salt, and pepper. Spoon yogurt mixture over salad and toss.
This recipe yields 6 servings. Serving size: 3/4 cup.
Exchanges Per Serving: 1 Vegetable.
