Crunchy Chicken Balls Recipe

AVOID OVERCOOKING. Chicken cooked in the microwave will be moist and juicy if it is covered and cooked for the proper amount of time. Estimate 7 minutes per pound for a whole Chicken.
Ingredients: 1 cup finely chopped cooked chicken 1/4 cup minced green onions 1/2 cup finely shredded low-fat sharp cheddar cheese 1/8 teaspoon pepper 2 tablespoons light mayonnaise 3/4 cup chopped fresh parsley
Instructions: In a bowl, combine the first five ingredients; mix well. Shape into 3/4-inch balls. Roll in parsley. Cover and chill.
