Crustless Spinach Quiche - Ada Recipe
Recipe Ingredients:
1 package frozen chopped spinach, (10-oz) 8 oz part-skim mozzarella cheese, grated 4 eggs, plus 2 egg whites, lightly beaten or 1&1/2 cups egg substitute 4 tsp grated onion 1/4 tsp nutmeg salt, optional and pepper, to taste nonstick vegetable cooking spray
Recipe Instructions:
Preheat oven to 350 degrees. Place spinach in colander to thaw; press out all moisture. Mix spinach with cheese, eggs, onion, nutmeg, salt, and pepper. Transfer to an 8-inch pie plate coated with vegetable spray. Bake 30 minutes or until knife inserted ! in center comes out clean. Serve hot or cold.
6 servings/Serving size: 1/6 pie
