Date And Cashew-Stuffed Chicken Recipe


Recipe Ingredients:

1/2 cup chopped dates
1/4 cup toasted cashew pieces
1 tbsp honey
1 tbsp canola oil
2 tbsp lemon juice
1 1/2 lb chicken breasts at least 1 1/2" thick
1 cup low-fat low-sodium chicken broth
1/2 cup dry white wine

 

Recipe Instructions:

Preheat the oven to 350 degrees. In a blender or food processor, combine the dates, cashews, honey, oil, and lemon juice until well mixed.

Cut a pocket in each chicken breast without cutting all the way through. Spoon some of the stuffing into each breast.

Place the chicken breasts into a casserole dish. Add the broth and wine to cover the chicken.

Cover the dish and bake for 20 minutes. Uncover and bake until the chicken is brown, about 10 minutes.

This recipe yields 6 servings. Serving size: 3 ounces.
