Date Cake Squares Recipe
Recipe Ingredients:
INGREDIENTS
1 cup Chopped dates 3/4 cup Chopped pitted prunes 1/2 cup Dark raisins 1 1/4 cup Water 8 tbsp Margarine, cut into pieces 2 each Eggs 1 tsp Vanilla 1 cup All-purpose flour 5 1/2 tsp Equal "Measure" OR 18 package Equal sweetener 1 tsp Baking soda 1/4 tsp Salt 1/2 tsp Ground cinnamon 1/4 tsp Ground nutmeg 1/4 cup Chopped walnuts
Recipe Instructions:
DIRECTIONS: Combine dates, prunes, raisins, and water in medium saucepan; heat to boiling. Reduce heat and simmer, uncovered, until fruit is tender and water is absorbed about 10 minutes. Remove from heat and add margarine, stirring until melted; cool. Mix eggs and vanilla into fruit mixture, mix in combined flour; Equal Measure, baking soda, salt, cinnamon and nutmeg. Spread batter evenly in greased baking dish, 11x7x2, sprinkle with walnuts. Bake in preheated 350F oven until cake springs back when touched lightly, 30 to 35 minutes. Cool on wire rack, cut into squares. Makes 24 squares.
