Diabetic Carrot-Raisin Salad Recipe
Recipe Ingredients:

2 cup Carrots, grated 1 cup Crushed pineapple, drained & -unsweetened 1/2 cup Raisins 8 oz Yogurt, plain & lo-fat 7 Lettuce leaves, optional
Recipe Instructions:
Combine carrots, pineapple, and raisins; mix well. chill for 2-3 hours Stir in yogurt, and serve on a lettuce leaf, if desired. Yeild 7 servings Each serving 1/2 cup Each serving may be exchanged for 1 fruit and 1 vegetable From the Diabetic Kitchen of Joni in S.Jersey, Enjoy:
