| “Every country possesses, it seems, the sort of cuisine it deserves, which is to say the sort of cuisine it is appreciative enough to want. I used to think that the notoriously bad cooking of the English was an example to the contrary, and that the English cook the way they do because, through sheer technical deficiency, they had not been able to master the art of cooking. I have discovered to my stupefaction that the English cook that way because that is the way they like it." | | ~ Waverly Root (1903-1982) |

Easy Dill Pickles Recipe
Recipe Ingredients:
48 each Pickling Cucumbers * 1 qt Cider Vinegar 1 cup Pickling Salt 1 each Bunch Dill 8 cup Water 12 cl Garlic, Peeled
Recipe Instructions:
* Pickling cucumbers are cucumbers that are not less than 3-inches long and not more than 4-inches long. Wash the cucumbers and remove any stems. Cover with cold water and refrigerate overnight or for several hours. Pack the cucumbers into pint jars as tightly as possible. Poke in 2 springs of dill. Bring the cider vinegar, water, salt and garlic cloves (12 to 16 cloves depending on your taste) to a boil. Boil for 2 minutes. Fish out the garlic cloves with a slotted spoon and put one in each jar (or to taste) while the brine cools slightly. Pour the hot brine into the jars and seal.
Makes 12 Pints. Personal note from Ursula Taylor - when I imported this recipe it called for 1 clove of garlic in the ingredients - but directions call for one garlic clove to go in each jar - so I adjusted the ingredients to reflect this....
Servings: 12
