Egg Burritos Recipe
Recipe Ingredients:
1 tsp butter 1/4 cup diced red bell pepper 1/4 cup diced green bell pepper 1/4 cup diced red onion 1 tbsp chopped black olives 8 large eggs, beaten 4 four tortilla shells - (10" dia) 1/4 cup grated cheddar cheese 1/4 cup salsa 1 tsp chopped fresh cilantro
Recipe Instructions:
Melt the butter in a pan over medium heat. Add the red and green bell peppers, onion, and olives. Cook until the vegetables are tender, about 4 to 5 minutes. Add the beaten eggs to the pan and stir until the eggs are fully cooked.
Meanwhile, heat the tortilla shells in either the microwave or the oven. Spoon 1/4 of the cooked egg mixture onto each tortilla. Top with cheese, salsa, and cilantro. Serve.
This recipe yields 4 servings. Serving size: 1 burrito.
