Equal Sweet Potato Pie Recipe
Recipe Ingredients:
INGREDIENTS
FILLING 2 cup Sweet Potatoes,cooked,mashed (about 2 lbs) 2 each Eggs, lightly beaten 7 1/4 tsp Equal*Measure OR 24 package Equal sweetener 1 tbsp Margarine, softened 1 tbsp Flour 1 1/2 tsp Ground cinnamon 3/4 tsp Ground nutmeg 1/4 tsp Ground mace, optional 1/2 tsp Salt 1 1/2 tsp Vanilla 1 can Evaporated skim milk (12 oz) 1 each Pie Shell, unbaked, 9 in
INGREDIENTS
REDUCED-FAT PIE PASTRY 1 1/4 cup Flour, all purpose 1 tbsp Equal*Measure OR 3 package Equal Sweetener 1/4 tsp Salt 4 tbsp Cold margarine, cut into Pieces 5 1/2 tbsp Cold water
Recipe Instructions:
DIRECTIONS: PIE FILLING Mix sweet potatoes, Equal*Measure, margarine, flour, spices, salt, vanilla, and evaporataed skim milk until smooth in large bowl. Pour mixture into pie shell. Bake in preheated 425 oven 20 minutes, reduce heat to 350 F and bake util filling is set and sharp knife inserted near center comes out clean, 30-35 minutes. Cool completely on wire rack; refrigerate until serving time.
DIRECTIONS: (REDUCED-FAT PIE PASTRY) Combine flour, Equal*Measure and salt in a medium bowl; cut in margarine with pastry blender until mixture resembles coarse crumbs. Mix in water, 1 T at a time, mixing lightly with a fork after each addition until dough is formed. Refrigerate until ready to use.
