Family Turkey Loaf Recipe
Recipe Ingredients:
Olive oil cooking spray 0.75 c Minced onion 0.75 c Minced scallion, including Some green 0.50 c Minced celery 0.50 c Minced carrot 0.25 c Minced green bell pepper 0.25 c Minced red bell pepper 2.00 Cloves garlic, minced 0.50 ts Salt (optional) 0.25 ts Cayenne pepper or to taste 1.00 ts Freshly ground pepper 0.50 ts Ground cumin 0.50 ts Ground nutmeg 0.50 c Evaporated skim milk 0.50 c Low-sodium ketchup 2.00 lb Ground turkey 2.00 lg Eggs, beaten 2.00 lg Egg whites 0.75 c Dry bread crumbs
Recipe Instructions:
Preheat oven to 350 degrees. Spray a large nonstick skillet with cooking spray. Add onion, scallion, celery, carrot, bell peppers and garlic. Saute over low heat until vegetables are tender and liquid is absorbed, about 10 minutes. Cool and set aside. Meanwhile, combine salt, cayenne, pepper, cumin and nutmeg. Add to vegetable mixture. Stir in evaporated skim milk, ketchup, turkey, eggs, egg whites and bread crumbs. Mix well. Form into a loaf and place in a baking dish lightly sprayed with cooking spray. Bake 45 to 50 minutes. Remove from oven and pour off all fat. Let stand for 10 minutes before slicing.
