Field Peas Recipe
Recipe Ingredients:
2 cups water 8 oz fresh chicken or turkey necks 1 medium onion, chopped 1 garlic clove, minced 1 tsp parsley 1 lb fresh or frozen field peas 1/2 tsp salt 1/4 tsp red pepper flakes Freshly-ground black pepper, (optional), to taste
Recipe Instructions:
In a large stockpot, boil the water. Add the chicken or turkey necks, onion, garlic, and parsley and boil for 15 minutes.
Add the field peas and cook until tender, about 30 minutes. Add the salt, pepper flakes, and pepper. Serve over steamed rice.
This recipe yields 6 servings. Serving size: 1 cup.
Exchanges Per Serving: 1 1/2 Starch, 1 Very Lean Meat.
