Fresh Squash And Onion Recipe
Recipe Ingredients:
2 lb Squash, yellow 1 medium Onion, finely chopped 1/2 tsp Salt dash Sugar, * 1/2 cup Water 2 tbsp Butter (or marg.), melted
Recipe Instructions:
* Use your favorite sugar substitute Wash squash and cut into 1-1/2" slices. Place in saucepan with onion, salt, and sugar; add 1/2 cup water. Cover tightly and steam about 10 minutes. Add butter and stir gently. Food Exchange per serving: 1 vegetable exchange, (make it work) NO'S NOTE: This would be excellent way to fix squash for the diabetic. All so I would cut down on the margarine. Note: This is my VERY FAVORITE way to eat squash (and we eat LOTS of squash) . (Nancy)
