Fruited Couscous Breakfast Recipe
Recipe Ingredients:
1 1/2 cups water 1 1/2 cups unsweetened apple juice 1 1/2 cups dry couscous 3/4 cup golden raisins 3/4 cup dried apricots 2 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp allspice 2 tsp honey, (optional)
Recipe Instructions:
In a medium saucepan bring the water and apple juice to a boil.
Add the couscous, raisins and apricots. Remove from the stove and let stand for 6 minutes, covered.
Drain any excess water from the couscous. Add the remaining ingredients and serve.
This recipe yields 6 servings. Serving size: 1/2 cup.
Exchanges Per Serving: 2 1/2 Starch, 2 Fruit.
