Gazpacho Salad Recipe
Recipe Ingredients:
1 1/2 cup Tomato juice 1 package (4-serving size) JELL-O Brand Lemon Flavor Sugar Free Gelatin 1 cup Finely chopped tomato 1/2 cup Finely chopped peeled cucumber 1/4 cup Finely chopped green pepper 2 tbsp Finely chopped red pepper 2 tbsp Sliced green onions 2 tbsp Vinegar 1/4 tsp Black pepper 1/8 tsp Garlic powder (optional)
Recipe Instructions:
Bring tomato juice to a boil in small saucepan. Completely dissolve gelatin in boiling tomato juice. Chill until slightly thickened. Combine remaining ingredients in medium bowl; mix well. Stir into gelatin mixture. Pour into individual dishes or medium serving bowl. Chill until firm, about 3 hours. Makes 3 2/3 cups or 7 servings.
