Greek Potato Salad Recipe
Recipe Ingredients:
2 tbsp Olive oil 2 tbsp Scallion, chopped 3 tbsp Bell pepper, chopped 2 tbsp Wine vinegar 1/2 tsp Oregano 2 cup Potatoes, diced 1/4 cup Feta, crumbled 2 tbsp Black olives, diced, pitted Cherry tomatoes and black olives for garnish
Recipe Instructions:
Combine the olive oil, scallion, green pepper, vinegar and oregano in a skillet. SAute over medium heat for about 3 minutes, until green pepper is tender. Stir in the potatoes, olives, and feta cheese. Toss to mix. Serve warm with cherry tomatoes and whole ripe olives.
