Green Beans With Roasted Red Pepper And Lemon Recipe
Recipe Ingredients:
6 cups trimmed green beans 1 cup diced roasted red pepper from a jar 2 tbsp fresh lemon juice 1 tsp grated lemon zest 2 tsp olive oil Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
Fill a large stockpot with 3 quarts of water. Bring to a boil.
Add the green beans and cook for 3 minutes. Drain. Splash the green beans with cold water.
In a large bowl, add the roasted red peppers, lemon juice, lemon zest, olive oil, salt, and pepper. Add the green beans. Toss well. Serve at room temperature.
This recipe yields 6 servings. Serving size: 1 cup.
