Green Beans With Tomatoes And Herbs Recipe


Recipe Ingredients:

1 tbsp olive oil
2 garlic cloves, minced
1 small onion, minced
1 can crushed tomatoes - (14 oz)
1 tsp minced basil
1 tsp minced oregano
1 lb trimmed green beans
Salt, to taste
Freshly-ground black pepper, to taste

 

Recipe Instructions:

In a medium skillet over medium heat, heat the oil. Add the garlic and onion and saute for 5 minutes. Add the tomatoes, basil, and oregano. Cook for 2 minutes.

Add the green beans. Cover and cook for 6 minutes. Season with salt and pepper.

This recipe yields 4 servings. Serving size: about 3/4 cup.

Exchanges Per Serving: 3 Vegetable or 1 Carbohydrate, 1 Fat.

Comments: The sauce for this recipe can be used as an all-around basic tomato sauce. Substitute zucchini, asparagus, or broccoli for the green beans if you like.
