Green Pea Mockamole Recipe


Recipe Ingredients:

1 package frozen petit peas - (16 oz)
4 green onions
1/2 cup fresh cilantro - (lightly packed)
2 tbsp lemon juice
1/2 cup Guiltless Gourmet salsa
= (roasted red pepper or
southwestern grill)
Fresh cilantro sprigs, (optional)
1 large bag Guiltless Gourmet baked tortilla, (7 oz)
= (yellow, red or blue corn)

 

Recipe Instructions:

Cook peas according to package directions; drain. Place peas, onions, 1/2 cup cilantro and juice in food processor or blender; process until smooth.

Transfer to serving bowl; gently stir in salsa to combine. Garnish with cilantro sprigs, if desired. Serve warm with tortilla chips or cover and refrigerate until ready to serve.

This recipe yields 12 servings. Serving size: 1/4 cup dip and 12 chips.
