Grilled Pork Loin Recipe


Recipe Ingredients:

1 lb boneless center-cut pork loin, trimmed of excess fat
4 tomatoes
3 tbsp minced fresh basil

 

Recipe Instructions:

Cut pork loin into 4 equal cutlets no more than 1/2-inch thick. Slice tomatoes about 1/4- to 1/2-inch thick and set aside. Mince basil and set aside.

Grill pork loin on barbecue grill. When first side is done, turn pork over and place basil and sliced tomatoes on top. Cover grill if possible and continue cooking until pork is done. If you cannot cover the grill, cutlets can be placed in a microwave af!
ter grilling to cook the tomatoes slightly.

4 servings/Serving size: 1/4 recipe
