Guacamole Recipe


Recipe Ingredients:

2 large ripe avocados, peeled, pit removed,
and mashed
1/2 chopped onion
2 medium jalapeño chile peppers, seeded, chopped
2 tbsp minced fresh parsley
2 tbsp fresh lime juice
1/8 tsp fresh ground pepper
2 medium tomatoes, finely chopped
1 medium garlic clove, minced
1 tbsp olive oil
1/2 tsp salt, (optional)

 

Recipe Instructions:

In a large mixing bowl, combine all ingredients, blending well. Cover and refrigerate for at least 1 to 2 hours.

This recipe yields 8 servings. Serving size: 1/4 cup.

Exchanges Per Serving: 2 1/2 Fat, 1 Vegetable.

Nutrition Facts: Calories 132; Calories from Fat 102; Total Fat 11g; Saturated Fat 2g; Cholesterol 0mg; Sodium 146mg (without added salt 11mg); Carbohydrate 9g; Dietary Fiber 5g; Sugars 3g; Protein 2g.

Comments: There's a secret to selecting perfectly ripe avocados: look for slightly blackened ones that give just a little when you press on their skins.
