Hearty Bean Soup Recipe


Recipe Ingredients:

2 tbsp Vegetable oil
1/2 cup Chopped onions
1/2 cup Chopped celery
1/2 cup Chopped carrots
1/2 cup Chopped green peppers
1 cl Garlic, minced
12 oz Cooked navy, or great =OR=-
12 oz Great northern beans
2 cup Water
16 oz (1 can) chopped tomatoes
1/2 tsp Dried basil
1/2 tsp Dried oregano
1 Bay leaf
Salt and pepper to taste
2 tbsp Parmesan cheese

 

Recipe Instructions:

Heat oil in large saucepan. Add onions, celery, carrots, green pepper and
garlic. cook until tender, about 10 minutes. Add water if necessary to
prevent drying. Add beans, water, tomatoes and spices. Reduce heat to low
and cook 1 hour. Remove and discard bay leaf. Sprinkle cheese over soup
before serving.

Per serving: 7g protein, 6g fat, 21g carb., 168mg sodium, 1mg chol., 157
calories.

Servings: 6
