Hearty Garlic Soup Recipe
Recipe Ingredients:
2 cups sliced onions 1 cup sliced green pepper 1 1/2 tbsp olive oil 20 garlic cloves, sliced 3 cups canned tomatoes 2 cups vegetable broth or water 3 slices dark whole wheat bread, cut in 1/4" cubes up to 4 black pepper, to taste
Recipe Instructions:
In large saucepan, saut onions and pepper in oil until soft and golden. Add garlic and tomatoes. Reduce heat, cover pan, and simmer for 30 minutes. Add broth; heat to a boil. Add bread cubes just before serving. Add black pepper to taste.
4 servings/Serving size: 1&1/2 cups
