Herb Roasted Turkey (Diabetic) Recipe
Recipe Ingredients:
3 1/2 lb (to 4 lb) Boneless turkey breast 2 large Garlic cloves, thinly sliced 1/2 tsp Salt 1 tbsp Chopped fresh rosemary OR 1 tsp Dried rosemary 2 tsp Chopped fresh thyme OR 1/2 tsp Dried thyme Paprika 4 Green onions, trimmed of ends and tops
Recipe Instructions:
1. Rinse turkey and pat dry. Loosen lining under skin with a knife. Pull skin back, leaving it attached along one edge. 2. Make cuts in surface of turkey and insert garlic slices. Combine salt and herbs. Sprinkle turkey with half the mixture. Replace skin and secure with toothpicks. 3. Sprinkle turkey with remaining herb mixture and paprika. 4. Place turkey in a roasting pan. Fold green onions in half lenthhwise and place inside the cavity of the turkey breast. 5. Bake in a preheated 325 degree F. oven for 2 to 2 1/2 hours to an internal temperature of 170 degrees F. or until meat is no longer pink. Let stand 10 minutes before slicing.
MICROWAVE Prepare turkey as described in steps 1 thru 3 above. Place in a glass baking dish, skin side down. Cover with plastic wrap, turning back one corner to vent. Cook in microwave on HIGH for 11 minutes. Turn skin side up and place onions underneath breast. Cook for an additional 20 to 30 minutes. Total cooking time should be approximately 7 to 10 minutes per pound of turkey. Makes 10 to 12 servings.
