Hot Water Cornbread Recipe
Recipe Ingredients:
1.00 c Yellow cornmeal 1.00 ts Salt 1.50 c Scalding water 1.00 tb Vegetable oil Nonstick vegetable spray
Recipe Instructions:
SOURCE: The American Diabetes Association, The American Dietetic Association FAMILY COOKBOOK Volume III with microwave adaptations - copyright 1987. 1. Combine cornmeal and salt; add water and oil. Mix well. 2. Fry 1/3 misture on hot griddle or skillet coated with nonstick vegetable spray, pushing mixture into shape of a patty with back of spatula. Fry patties on both sides until golden brown, about 3 minutes per side. Serve hot. YIELD: 6 servings - each 1/3 cup. EXCHANGES: 1 Starch/Bread and 1/2 fat. NUTRIENT CONTENT per serving: CAL 107, FAT 3 gm., Na 355 mg., Fiber 2 gm., PRO 2 gm., CHO 18 gm., K 28 mg., Chol 0 mg.
