Island Sweet Potato Pudding Recipe


Recipe Ingredients:

12 oz Cooked sweet potatoes, peeled and cut in chunks
1 medium Ripe banana, mashed
3 tsp Brown sugar, firmly packed
2 tbsp Reduced calorie margarine, +
2 tsp Reduced calorie margarine
1/4 tsp Ground nutmeg
1 tsp Rum extract
1 Egg white

 

Recipe Instructions:

Preheat oven to 350. In a large bowl, beat all ingredients except egg white
until smooth. Add a small amount of water if necessary, to get a smooth
consistency. Beat egg white until stiff. Fold gently into sweet potato
mixture. Spoon into a casserole that has been sprayed with a nonstick
cooking srpay. Bake, uncovered, 45 to 50 minutes, until lightly browned.

Per serving: 3g protein, 4g fat, 28g carb., 147mg sodium, 0mg chol., 174
calories.

Servings: 4
