Italian Leafy Green Salad Recipe
Recipe Ingredients:
=== SALAD === 2 cups torn romaine lettuce 1 cup torn escarole 1 cup torn radicchio 1 cup torn red-leaf lettuce 1/4 cup chopped scallions 1/2 red pepper, sliced into rings 1/2 green pepper, sliced into rings 12 cherry tomatoes === DRESSING === 1/4 cup grapeseed oil = (or substitute olive oil, if necessary) 2 tbsp minced basil 1/4 cup balsamic vinegar 2 tbsp lemon juice Salt, to taste Freshly-ground black pepper, to taste
Recipe Instructions:
Combine all salad ingredients in a bowl, making sure leaves are dry.
Whisk together the dressing ingredients. Pour over salad and serve immediately.
This recipe yields 6 servings. Serving size: 1 cup.
Exchanges Per Serving: 1 Vegetable, 2 Polyunsaturated Fat.

Comments: Grapeseed oil is the secret to this salad. If you cannot find it, use olive oil.
