Japanese Noodle Soup Recipe
Recipe Ingredients:
1 package Japanese udon noodles - (8 1/2 oz) 1 tsp vegetable oil 1 medium red bell pepper, cut thin strips 1 medium carrot, diagonally sliced 2 green onions, thinly sliced 2 cans fat-free reduced-sodium beef broth, (14 oz ea) 1 cup water 1 tsp reduced-sodium soy sauce 1/2 tsp grated fresh ginger 1/2 tsp freshly-ground black pepper 2 cups thinly-sliced fresh shiitake mushrooms, stems removed 4 oz daikon (Japanese radish), peeled, and cut into thin strips 4 oz firm tofu, drained, and cut into 1/2" cubes
Recipe Instructions:
Cook noodles according to package directions, omitting salt; drain. Rinse; set aside.
Heat oil in large nonstick saucepan until hot. Add red bell pepper, carrot and green onions; cook until slightly softened, about 3 minutes. Stir in beef broth, water, soy sauce, ginger and black pepper; bring to a boil. Add mushrooms, daikon and tofu; reduce heat and simmer 5 minutes.
Place noodles in soup tureen; ladle soup over noodles.
This recipe yields 6 servings.
