Lemon-Dijon Chicken Recipe
Recipe Ingredients:
0.33 c Lemon juice 1.00 ts Dijon mustard 3.00 Cl Garlic; crushed 2.00 c Defatted low sodium chicken 6.00 Chicken breasts; boneless, -skinless, (6 oz ea) 0.50 ts Lemon pepper 1.00 tb Cornstarch 0.50 ts Fresh rosemary 1.00 ts Lemon peel; shredded

Combine the lemon juice,mustard,garlic and 1/2 cup of the chicken broth. Mix well. Wash and pat dry chicken breasts. Pour marinade over chicken breasts and let marinate,refrigerated for1 hour. Preheat broiler.Remove chicken from marinade and reserve marinade. Sprinkle chicken with the lemon pepper.Broil until done about 10 minutes on each side. Meanwhile measure out 2 tablespoons of the remaining stock and set aside.Combine the rest of the stock with the marinade in a saucepan.Bring to and boil and then reduce to a simmer. Simmer for 15 minutes. Mix together the cornstarch and reserved stock. Blend into the simmering mixture and cook for 5 minutes longer. Strain the sauce theough a china cap or fine sieve. Add the rosemary and lemon peel. Serve sauce over the chicken.
