Light And Fruity Cranberry Salad Recipe


Recipe Ingredients:

1 can crushed pineapple - (8 oz), drained,
reserving juice
1/2 cup Ocean Spray Light Cran-Raspberry
raspberry cranberry juice drink
2 tbsp lemon juice
1 package sugar-free raspberry flavored gelatin, (0.3 oz)
1 can Ocean Spray whole berry cranberry sauce, (16 oz)
1/2 cup chopped celery

 

Recipe Instructions:

Combine reserved pineapple juice, cranberry raspberry juice, and lemon juice in a medium saucepan. Bring to a boil. Remove from heat. Add gelatin, stirring until it is completely dissolved.

Break up cranberry sauce with a fork. Stir into gelatin mixture. Refrigerate until mixture begins to set.

Stir in pineapple and celery. Pour into a 4-cup mold. Chill until firm.

This recipe yields 8 servings. Serving size: 1/2 cup.
