| "Cuisine is both an art and a science: it is an art when it strives to bring about the realization of the true and the beautiful, called le bon (the good) in the order of culinary ideas. As a science, it respects chemistry, physics and natural history. Its axioms are called aphorisms, its theorems recipes, and its philosophy gastronomy." | | ~ Ginette Olivesi-Lorenzias | |

Linguine With Garlic Broccoli Sauce Recipe
Recipe Ingredients:
3 tbsp olive oil 8 medium garlic cloves, minced fresh ground pepper 1/4 cup dry white wine 1 tsp dried oregano 1 tsp dried basil 1/2 tsp dried thyme 2 cups broccoli florets 2 tbsp pine nuts, toasted 1 lb uncooked linguine 1/4 cup grated parmesan cheese
Recipe Instructions:
In a medium skillet over medium heat, heat the oil. Add the garlic and pepper, sauting for 5 minutes. Add the wine and bring to a boil. Reduce the heat and simmer for 3 to 4 minutes. Add the oregano, basil and thyme. In a large pot of boiling water, add the broccoli florets and then turn off the heat. Immediately rinse the broccoli under cold running water to stop the cooking process. (This method of blanching helps the broccoli to retain its bright green color and crispness.) Add the broccoli to the wine sauce and heat 2 more minutes. Prepare the linguine according to package directions (without adding salt) and drain. Transfer the linguine to a large serving bowl and pour the wine sauce over the top. Sprinkle with Parmesan cheese to serve.

| "Americans, more than any other culture on earth, are cookbook cooks; we learn to make our meals not from any oral tradition, but from a text. The just-wed cook brings to the new household no carefully copied collection of the family's cherished recipes, but a spanking new edition of ‘Fannie Farmer’ or ‘The Joy of Cooking’." | | ~ John Thorne, American food writer |
