Make-Ahead Mashed Potatoes Recipe
Recipe Ingredients:
6 medium red potatoes, about 2 pounds 1/2 cup skim milk 2/3 cup evaporated skim milk 2 tbsp reduced-fat margarine nonstick cooking spray paprika, for garnish optional
Recipe Instructions:
Peel the potatoes and cut them into cubes. Place them in a large saucepa= n and=0Acover them with water. Cover the pan and bring the water to a bo= il. Reduce=0Ahead and simmer until the potatoes are tender, about 25 min= utes. Drain and=0Amash the potatoes with a mixer or run them through a r= icer or food mill. Heat=0Athe milk, evaporated milk and margarine until = the margarine melts. Reserve=0Aand refrigerate 1/4 cup of the milk mixtu= re and beat the rest into the=0Apotatoes. Spoon the potato mixture into = a 1 1/2-quart casserole that has been=0Asprayed with nonstick cooking spr= ay. Smooth the top, cover, and refrigerate.=0AWhen ready to heat, remove= the casserole from the refrigerator, pour on the=0Areserved milk mixture= , and let it sit at room temperature for about 2 hours.=0APreheat oven to= 350=F8F and bake, uncovered, until hot, about 25 minutes.=0ARemove from = the oven and stir; garnish with paprika if desired. (Note: You=0Acan als= o reheat the potatoes in a microwave oven by cooking them on high! for about 10 minutes, rotating and stirring the m once during cooking.)
