Marinated Vegetable Salad Recipe
Recipe Ingredients:
4.00 c Chopped tomatoes **SEE NOTE 1.00 c Chopped celery 1.00 c Chopped onion 0.50 c Chopped green pepper 0.75 c Red wine vinegar 0.50 c Vegetable oil 0.25 c Sugar (or sugar subst.) 2.00 tb Poppy seeds (optional) 1.00 tb Salt **NOTE 2 cups more tomatoes -can be added safely without -adjusting anything else.
Recipe Instructions:
Combine tomatoes, celery, onion and green pepper in a large bowl. Toss lightly. Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour marinade over vegetables. Cover and chill at least 3 hours. Yield: 6 to 8 servings. This is a recipe given to me by Marie Wright. It came from her Mother-In-Law. Formatted into MM by Ursula R. Taylor.
