Middle Eastern Sandwiches Recipe
Recipe Ingredients:
1/2 cup frozen mixed pepper and onion stir fry 3 tbsp chopped tomato 1 tbsp dark raisins 1 garlic clove, minced 1 pinch dried thyme leaves 1 pinch cinnamon 1 small whole-wheat pita bread, cut in half
Recipe Instructions:
In a medium non stick skillet coated with non stick spray, combine the pepper onion mixture, tomato, raisins, garlic, thyme and cinnamon. Stir to mix well. Cook over medium heat, stirring occasionally with a wooden spoon, until the onions are softened, about 2 to 3 minutes.
Divide mixture evenly in pita pockets and serve.
This recipe yields 2 servings. Serving size: 1 pita bread half.
Exchanges Per Serving: 1 Starch, 1 Vegetable.
