Molded Cranberry Salad Recipe


Recipe Ingredients:

0.50 tb Unflavored gelatin
1.00 c Diet ginger ale
1.00 c Cranberries,coarsely chopped
0.50 tb Fresh lemon juice
1.00 ts Grated orange peel
2.50 ts Sweetener or sugar
0.25 c Finely chopped celery
0.25 Medium apple, chopped

 

Recipe Instructions:

Sprinkle gelatin over 2 tb ginger ale; let stand 5 min
to soften. Combine remaining ginger ale, cranberries,
lemon juice and orange peel in a saucepan. Bring
quickly to a boil. Remove from heat. Add softened
gelatin and sweetener; stir until gelatin dissolves.
Chill until partially set. Stir in celery and apple.
Spoon into a rinsed mold. Refrigerate at least 4 hours
until set.
