2.00 c Okra 0.25 c Vinegar 2.00 c Tomatoes; cut into 1/8's 1.00 c Onions; coarsely chopped 0.50 c Green Pepper; coarsely chop Sprig Parsley, chopped 1.00 tb Mint; chopped 1.00 ts Garlic Powder Salt and Pepper, to taste Veg. Cooking Spray
Recipe Instructions:
Soak okra in vinegar for 5 min. Drain. Pat okra slightly dry. Combine all ingred. (except vinegar) in baking dish coated w/ vegetable cooking spray. Cover. Bake at 350 for 45 min. Yield: 5 servings Exchange: 1 vegetable Calories/serving: 31
